Carboxymethylcellulose or CMC is a cellulose derived polymer. This is a food additive marked by the E466 code and is used in particular as a thickener. It has the appearance of fibrous or grainy powder that is soluble in both cold and hot water. It is stable in a pH range of 5 to 10 and has a good compatibility with alcohol: in dispersions of low concentration, it can be added up to 40 percent. It has stabilising and protective colloid properties and delays the growth of sugar crystals at a concentration of 0.2-2%.
