Food preparation’s quicker and safer with razor sharp knives TO USE: 1. Soak the waterstone in water for around 10 minutes. Fit in its silicone base on a firm steady surface. In use, it’s normal for a powdery slurry to appear. Don’t wash this away as it creates, in effect, a honing and polishing compound. If it starts to dry just sprinkle on a bit more water. 2. If the knife’s blunt use the #1000 grit side first to achieve a good edge. Hold at around a 20 degree angle (hint, the back of the blade should come halfway up your thumb when it is resting on the stone). Move back and forth smoothly until you achieve the desired result on both sides – this takes around 15 minutes. This grit side only needs to be used occasionally depending on frequency of use. 3. Use the #6000 grit side to polish your knife with slightly less pressure. Keep polishing until you achieve a superfine polished finish. Frequent use will maintain a sharp edge. 4. Use the whole whetstone surface to keep consistency and help it last longer. Constant use of the same area will cause dips so turn the stone around frequently and go to the edges5. After sharpening, rinse in water and leave until fully dry. 6. Place in a safe, dry place, out of the reach of children. Avoid dropping the stone. NOTE A sharpening stone works at its optimum when flat with no “dips”. After a while, you may wish to “flatten” your stone. Use a “flattening stone” or the 400 grit side of the OAKES 400/1000 sharpening stone works very well. Make criss cross marks with a graphite pencil across the face of the stone and then rub the two whet stones together until the pencil marks are erased and you’ll have a perfectly flat stoneents: 1 x sharpening stone 1000/6000 grit 1 x silicone rubber base.
